Whetstones from around 20 to 10,000 grit

The grain size of whetstones is measured in grit and can range from very coarse stones around 20 grit to extremely fine stones up to 10𧄀 grit. Lower grit numbers mean coarser particles used to shape or restore the edge, while higher grit numbers are used to refine and polish.

Sharpening requires practice. If you are a beginner, it is wise to start with a simpler tool before working on your best knife or straight razor. This allows you to develop the right feel and angle before sharpening more delicate edges.

Which grit should you choose?

The grit you should choose depends on how dull the edge is and the result you want to achieve. When sharpening straight razors and knives, you typically work in stages from coarser to finer grit.

• 20–400 grit – very coarse sharpening for damaged or extremely dull edges.
• 600–1𧄀 grit – basic sharpening when the edge needs restoration.
• 2𧄀–3𧄀 grit – refining the edge after coarse sharpening.
• 5𧄀–10𧄀 grit – polishing and final finishing for an exceptionally sharp and smooth edge.

For straight razors, it is especially important to finish with a fine grit, as the edge must be smooth enough to provide a comfortable shave without irritation.

Japanese water stones are a good choice for beginners

Whetstones are often divided into rotating and non-rotating variants. The non-rotating type, resembling small bricks, are often called Japanese water stones. This type of whetstone is relatively easy to get started with if you want to sharpen knives or straight razors at home. When a water stone is used with water, it releases small particles that form an abrasive slurry. It is this slurry that performs the sharpening. The effectiveness of the sharpening depends on the grit of the stone. To sharpen a straight razor properly, several water stones with different grit levels are typically used, starting coarse and finishing fine to achieve a smooth and sharp edge.
